Light and Fit Fritatta

For some reason instead of losing weight this summer, I have gained a bit. I’m pretty sure it is due to the work and home schedule being so full, it leaves little time to prepare a healthy meal. It is so much easier to just grab and go, or heat up something quick. Mostly, I think it is not having time to eat at all until dinner that really messes with my body.

New school year means new routine, and what better time to get myself in a new eating routine than now! Now I can admit, Im still not going to eat breakfast. Unhealthy, yes, but I’m pushing my luck scavenging some time for lunch so…baby-steps. I have found the magic of fritattas not only fill you up with some fabulous lean protein, but squeeze in some veggies at the same time. Here’s what I do to pack in the flavor and the full while keeping it lean.

What you will need:

-1 Whole Egg

-3 Egg Whites ( You can do 4 egg whites and skip the whole egg, but I like to have a little yellow in there to make it seem less like “Diet Food”) -1/4 Onion Diced

-1/4 Green Pepper Diced

-2 Garlic Cloves Sliced

-2 oz Ham, diced

-1/2 tsp Garlic Powder

Salt/Pepper to taste

-Shaved Parm ½ oz

-Diced Tomato

-Fresh Chopped Basil

Base Recipe: Preheat oven to 350. In a nonstick oven safe pan, saute all the veggies and the ham together for about 2 minutes, just enough so they start to soften up.

While they are cooking, whisk the whites and the egg together well.

Turn off heat and add egg whites or egg mixture over the sauteed veggies, sprinkle on garlic powder, add desired salt and pepper ( apprx ¼ tsp each to start) and bake at 350 for 10 minutes.

Add the shaved parm on top, turn the oven off and let it sit for 2 minutes. Once I pull it out of the oven I let it rest for a few more minutes before topping with some fresh basil, as well as ¼ Chopped Roma tomato.
