That’s right, dear Keto-munching friend. You CAN have Mac & Cheese and stay in ketosis.
Well….sort of. I mean, not pasta (which I’m sure you miss just as much as I do), but cauliflower!
Just trust me- try it once.
1 cup cauliflower (frozen is quicker, but fresh is fine too)
2 oz sharp cheddar (shredded)
1/2 tbs ghee or butter
1 tbs cream cheese
Microwave your cauliflower in a bowl covered in plastic wrap for approx 1 – 1 and 1/2 minutes.
Roughly chop the cauliflower and add cheddar, butter, and cream cheese.
Microwave for 1 – 1 and 1/2 more minute.
Well? Yum, right? Not too shabby and totally reminds me of mac and cheese (you can make this recipe bigger, too, but only if you’re prepared to nosh out on it because you will NOT be able to resist!)
